Smashed Peas

Here is a fabulous and tasty quick meal. It is called smashed peas, love the name.

Make sure you always have in you kitchen a can of Minted peas. All you do is boil them in a pot till they are soft. 5 minutes.

Then take them of the heat and drain them in a sieve. Then squash them with a fork in a bowl.

Cut up ciabatta bread and toast it till it is as crispy as you like it. Butter it and put smashed peas on top of the toast. Garnish with fresh cut up mint and grated parmesan cheese. Add salt and pepper too.
